Healthy Semolina Balls Recipe: Made in less oil, these tasty snacks are perfect for rain and evening hunger..

Yummy Suji Balls: Be it the rainy season or evening hunger, you need something that is quick to make, light, and most importantly, tasty! If you are also bored of eating the same paratha, bread, or Maggi every day, then today we have brought for you a quick and healthy snack, Suji Balls. The special thing about this recipe is that it can be made tasty and crispy even without much oil. Also, all the ingredients needed for it are easily available in every kitchen. So let's start.

Ingredients:
1. Semolina – 1 cup
2. Water – 1.5 cups
3. Oil – 2 tsp (for starting) + 2 tsp (for tempering)
4. Mustard seeds – 1 tsp
5. Ginger – 1 tsp (grated)
6. Green chilli – 2 (finely chopped)
7. Curry leaves – 8-10
8. Salt – to taste
9. Chilli flakes – 1 tsp
10. Cumin seeds – 1 tsp
11. Asafoetida – a pinch
12. Sesame seeds – 1 tbsp
13. Sambar masala – 1 tbsp
14. Dry coconut (desiccated) – 2 tsp
15. Coriander leaves – 1 tbsp (chopped)
Method:
1. Prepare the semolina dough
Heat 2 tsp oil in a pan. Add mustard seeds, ginger, green chillies, and curry leaves. When they are lightly roasted, add 1.5 cups of water, salt, and chilli flakes. As soon as the water starts boiling, add semolina and cook while stirring continuously until the mixture becomes thick and bindable. Turn off the gas and cover and leave for 5 minutes.
2. Make balls
When it cools down a bit, knead the dough well. Now make small balls with your palms. If you want, you can use a spoon for measurement so that all the sizes are the same.
3. Steam the balls
Apply light oil on a sieve, place the balls in it, and place it in a large vessel and cover. Steam for 15 minutes on medium flame.
4. Fry with tempering
Heat 2 tsp oil again in a pan. Add mustard seeds, cumin seeds, asafoetida, sesame seeds, curry leaves and green chillies. Now add sambhar masala and dry coconut to it. Fry for a few seconds, then add some water and mix so that the spices do not burn. Now add the steamed balls, add chilli flakes and mix gently. Cook covered on low flame for 2 minutes so that the flavour penetrates inside.

5. Serving Method
The balls are ready. Sprinkle coriander leaves on top and serve it with ketchup or green chutney. this snack is perfect with kids tiffin, morning breakfast or evening tea.
