Gulab Jamun Recipe: It is rare to discuss Indian sweets without mentioning Gulab Jamun. Whether it is a wedding, festival, birthday, or any special celebratory occasion, Gulab Jamun remains a top favorite. Its soft texture and sweet taste appeal to people of all ages. While Gulab Jamuns are easily available in the market, the taste and freshness of homemade ones are truly unmatched. Although many people think making them is difficult, with the right ingredients and a simple method, you can easily prepare them at home.

To make Gulab Jamun, using the correct proportions of *mawa* (milk solids), *maida* (all-purpose flour), and yogurt is essential. When the soft dough balls prepared from these ingredients are fried until golden and then soaked in a fragrant sugar syrup, the resulting taste and texture are exquisite. Ingredients
All-purpose flour (*Maida*) – 2 cups
*Mawa*/*Khoya* – 1 cup
Yogurt – ½ cup
Baking soda – ¼ teaspoon
Cardamom powder – ½ teaspoon
Oil/Ghee – for frying
Sugar – 1 cup
Water – 2 cups
Cardamom powder – ½ teaspoon
Saffron – a few strands (optional)

Method
To make Gulab Jamun, first combine the all-purpose flour, *mawa* (or *khoya*), yogurt, baking soda, and half a teaspoon of cardamom powder in a large bowl and mix well. Then, gently knead the mixture into a soft dough.

You may add a little more yogurt if needed. Once the dough is ready, cover it and let it rest for about 15 to 20 minutes. Ensure the yogurt is fresh and not sour at all.

Now, grease your hands with a little refined oil or ghee and shape the dough into small, smooth balls. Ensure there are no cracks on the balls, as this could cause the Gulab Jamuns to split while frying. Next, heat ghee or oil in a deep pan (kadhai) and fry the balls over low to medium heat until they turn golden brown.

Then, to prepare the sugar syrup, combine 1 cup of sugar and 2 cups of water in a pan and bring to a boil. Once the sugar has completely dissolved, add cardamom powder and, if desired, a few strands of saffron. Turn off the heat once the syrup is ready (it should be a light consistency).

Place the hot, fried Gulab Jamuns into the warm syrup and let them soak for at least 2 to 3 hours. This allows the syrup to penetrate thoroughly, making the Gulab Jamuns incredibly soft, juicy, and delicious. They can then be served either warm or cold.
