Gatte Ki Sabzi Recipe: Rajasthan's famous Gatte Ki Sabzi is not only delicious but also easy to make. However, many times, it's made but doesn't turn out soft, leaving the dish without any flavor. It's hard to understand why it tastes so good at Rajasthani dhabas, yet it doesn't taste as mouth-watering at home. This spicy gram flour curry is known for its flavor, texture, and aroma. So, let's learn how to make the perfect Gatte Ki Sabzi at home.

Ingredients for Gatte:

Gram flour – 1 cup
Salt – to taste
Turmeric powder – 1/4 teaspoon
Red chili powder – 1/2 teaspoon
Celery seeds – 1/2 teaspoon
Yogurt – 2 tablespoons (to soften the Gatte)
Oil – 1 tablespoon (for kneading)
Water – as needed (for kneading the dough)
Ingredients for Gravy:
Yogurt – 1 cup
Gram flour – 1 tablespoon (to mix into the yogurt to prevent curdling)
Onion – 1 large (finely chopped)
Tomatoes – 2 (ground or pureed)
Ginger-garlic paste – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Mustard seeds – 1/2 teaspoon
Asafoetida – a pinch
Curry leaves – 5-6
Turmeric powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Red chili powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Kasuri methi – 1/2 teaspoon (crush and add)
Salt – to taste
Oil or ghee – 2 tablespoons
Water – as needed (for gravy)

Method for making Gatte:

First, take gram flour in a bowl. Add salt, turmeric, red chili powder, carom seeds, and a little oil. Add water little by little and knead a stiff dough. Roll this dough into long rolls and cook in boiling water for 8-10 minutes. When the Gatte float to the top, remove them, cool them, and cut them into small pieces.

Prepare the gravy:

Heat some oil in a pan. Add cumin seeds, mustard seeds, asafoetida, and curry leaves. Add onion, ginger-garlic paste, and fry until golden brown. Then add tomato puree, red chili powder, coriander powder, and turmeric. Now whisk together the yogurt and gram flour, stirring constantly to prevent curds from curdling. Cook over low heat for 5 minutes, until the masala thickens.

Add the Gatte and Cook
Now add the boiled Gatte to the gravy and cook over low heat for 10 minutes, allowing them to absorb the full flavor of the spices. You can adjust the consistency of the gravy to your liking by adding a little water.

Taste Enhancement Tips
If you want to make the Gatte softer, add a spoonful of yogurt while kneading the dough. This will make the Gatte soft and spongy. Add a little kasuri methi and garam masala to the yogurt gravy, which will enhance the flavor. Serve with coriander leaves.
