Whether it's pizza, pasta, or chili cheese, all are incomplete without red chili flakes. Often, when we order from Domino's or other large pizza outlets, the color and crispness of their chili flakes are completely different and superior to the chili flakes we grind at home. The good news is that you don't have to wait for those small pizzas to run out. You can make "Domino 's-style" red chili flakes at home in just 5 minutes. Let's learn the step-by-step method...

Ingredients needed: First, 15-20 dried red chilies (long or round Boriya chilies, thoroughly dried) and just 2-3 drops of cooking oil (for the glaze).
Choosing and cleaning chilies: First, select dark red chilies. Make sure they are free of moisture. If the chilies seem a little soft, let them sit in the sun for 1 hour or lightly heat them in a pan. Break off the chili stems and discard them.
Roasting (The Real Secret): Place a heavy-bottomed pan on the stove and heat it over medium heat. Add the red chilies. Stir them for 2-3 minutes without oil.
Master Tip: Roast the chilies until they are crispy and slightly darker in color. Adding a couple of drops of oil while roasting gives the flakes a domino-like shine.
Cooling: Transfer the roasted chilies to a plate and let them cool completely. Never grind hot chilies, as they will become powdery and moist.
Pulse Mode Grinding (The Most Important Step): Place the chilies in a mixer jar. Now, instead of continuously running the mixer, run it on 'Pulse Mode'. That is, run the mixer for 1 second and then stop immediately. Do this 3-4 times. We don't want to grind them finely, just break them into pieces.

Separating the seeds: If you want the flakes to look exactly like the ones you buy at the store, you can strain them through a fine-mesh sieve to remove any excess seeds.
