During Navratri fasting, healthy foods should be included in the fruit diet. While people typically eat fruits or tapioca-based dishes, you can also try some new and tasty dishes. Let's learn the recipe for making bottle gourd rabdi for Navratri's fruit diet.

Ingredients:

1 small bottle gourd (about 250 grams), peeled and grated
1 liter full-cream milk
1/2 cup sugar
1/4 teaspoon cardamom powder
1 tablespoon ghee or oil
Some almonds and pistachios, finely chopped

Method:

First, peel and wash the bottle gourd thoroughly, and then grate it. Squeeze out all the water from the grated bottle gourd to make a richer rabri.

Heat the ghee in a pan. Once the ghee is hot, add the grated bottle gourd and fry over medium heat for 5-7 minutes. Fry the bottle gourd until it lightens in color and the rawness evaporates.

Now add the milk and bring it to a boil. Once the milk has boiled, reduce the heat to low and cook until it thickens to half its consistency. Stir occasionally to prevent it from sticking to the bottom.

When the milk thickens and begins to resemble rabri, add the sugar and cardamom powder. Mix well and cook for 2-3 minutes, until the sugar dissolves completely.

Turn off the heat and let the rabri cool. You can also refrigerate it.

Once cooled, garnish the rabri with chopped almonds and pistachios and serve.
