Doodh Laddu Recipe: Sometimes, milk kept at home curdles unexpectedly, leaving one wondering what to do with it. Instead of immediately discarding it, you can transform it into a delicious sweet. A recipe shared on the YouTube channel 'Soni Kitchens' demonstrates how to make *laddus* (sweet balls) using curdled milk and dry fruits. The process involves first preparing *paneer* (cottage cheese) from the curdled milk, then cooking it with sugar, milk powder, and cardamom until it achieves a *mava*-like (condensed milk solids) consistency.

Roasted cashews, almonds, and coconut are mixed in to form the *laddus*. The best part is that this sweet can be prepared using ingredients readily available at home.
**Ingredients for making *laddus* from curdled milk:**
1 liter curdled milk, ½ cup sugar, ½ cup milk powder, 1 teaspoon cardamom powder, 1 tablespoon *ghee* (clarified butter), 150–200 grams chopped cashews and almonds, 2–3 tablespoons desiccated coconut, and pistachios and almonds for garnishing.
**First, prepare *paneer* from the curdled milk:**
Start by adding a little water to a heavy-bottomed pan, then pour in the milk and heat it. Once the milk has fully curdled, strain it using a muslin cloth or a fine sieve to separate the *paneer* from the whey (water). It is crucial to press out any excess water from the *paneer*; if too much moisture remains, the *laddu* mixture will not bind properly.
**Preparing the sweet mixture:**
Place the prepared *paneer* into a mixer jar. Add sugar, milk powder, cardamom powder, and a little water, then blend into a smooth paste. Next, heat *ghee* in a pan, add the mixture, and cook while stirring continuously. After a while, the mixture will begin to thicken and resemble *mava*. Turn off the heat once the mixture starts leaving the sides of the pan and reaches a thick consistency. Cooking it for too long can cause the mixture to dry out excessively, resulting in hard *laddus*.
**Enhance the Flavor with Dry Fruits**
Heat a little ghee in another pan and lightly roast the chopped cashews and almonds. Add the desiccated coconut and mix for a short while. Do not roast the dry fruits over high heat, as this can alter their flavor. Now, allow the prepared *mawa*-like mixture to cool slightly. Add the roasted dry fruits and coconut to it and mix thoroughly. Once the mixture is cool enough to handle, take small portions and shape them into round *laddus*. You can garnish them with pieces of pistachio and almond. You may adjust the size—making them smaller or larger—according to your preference.

**Points to Remember While Making Laddus**
When making sweets from curdled milk, the most important thing is that the milk should simply be curdled, not spoiled or foul-smelling. Do not use the milk if it has an unusual odor or has gone bad.
