**Ingredients for Crispy Masala Bhindi:**
Okra (Bhindi) – 250 grams
Gram flour (Besan) – 2-3 tablespoons
Rice flour – 1-2 tablespoons
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 teaspoon
Coriander powder – 1 teaspoon
Dry mango powder (Amchur) – 1 teaspoon
Roasted cumin powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Carom seeds (Ajwain) – 1/2 teaspoon
Salt – to taste
Oil – for frying
**Method for making Crispy Masala Bhindi:**
First, wash the okra thoroughly and pat it completely dry using a cloth. Trim off the top and bottom ends of the okra, then slice each piece lengthwise into two or four thin strips.
Transfer the sliced okra to a large bowl and add the turmeric, red chili powder, coriander powder, garam masala, carom seeds, roasted cumin powder, dry mango powder, and salt to taste.
Next, sprinkle the gram flour and rice flour over the okra. Gently mix everything with your hands so that the spices and flour form a light coating over the okra pieces. If the mixture appears too dry, simply add a teaspoon of oil. Now, heat oil in a pan and add the okra in batches. Fry the okra over medium heat for 3–4 minutes until it becomes crispy.
Once the okra starts turning crispy, remove it and place it on tissue paper to drain the excess oil.
