Ingredients for Making Rice Kachri

Rice – 1 bowl
Water – 2 bowls
Salt to taste
Oil for frying
Black pepper – 1/2 teaspoon
Ghee – 1 tablespoon

This is the simplest method.

To make rice kachri, first wash 1 bowl of rice thoroughly, add it to 2 bowls of water, and put it in a pressure cooker. Then add salt, black pepper powder, and 1 tablespoon of ghee to taste. Mix everything well, close the lid, and let it boil for 3-4 whistles.

Keep the rice slightly moist so that the kachri becomes soft and can be easily mashed after cooking. Once the pressure in the cooker has released, open the lid and mash the rice thoroughly. Now, transfer the mashed rice to a piping bag so that you can shape it properly.

For this, spread a clean polythene sheet and, using a piping bag, make long or round Kachris on the polythene. You can make them in any shape you like. Now, dry these Kachris in the sun for 1-2 days until they dry completely.

Once the Kachris are completely dry, they can be fried. Heat oil in a pan and fry the Kachris until golden and crispy. After frying, place the Kachris on a kitchen towel to drain off any excess oil. These Kachris can be served with tea, yogurt, or your favorite chutney. They are crispy, delicious, and refreshing.
