Chatpata Corner: Make delicious golgappa chaat with a potato-chickpea filling and tangy, spicy water..

Golgappa Chaat Recipe: The best part about eating golgappas is when the crispy shell shatters the moment it enters your mouth, complemented by a zesty potato-chickpea filling and a tangy, spicy flavored water. To recreate market-style golgappas at home, it’s not just about using the right spices—the preparation method is equally crucial; if the shells come into contact with water or moisture beforehand, they lose their crunch.

Therefore, when making golgappa chaat, it is best to prepare the flavored water, the filling, and the crispy shells separately. Here is an easy way to prepare golgappa chaat, complete with a spicy coriander-mint water, a potato-chickpea filling, and perfectly crispy shells. Ingredients for Making Golgappa Chaat
For the Puris (shells):
1. 25–35 store-bought golgappa puris
2. A little oil (as needed), if frying the puris at home

For the Potato-Chickpea Stuffing:
1. 2 medium-sized potatoes
2. 3/4 cup boiled chickpeas
3. 1 teaspoon roasted cumin powder
4. 1/2 to 3/4 teaspoon salt
5. 1/2 teaspoon red chili powder (adjust to taste)
6. 1 teaspoon chaat masala or amchur (dried mango) powder
7. 2 tablespoons chopped fresh coriander leaves

For the Spicy Water (Teekha Paani):
1. 1 cup fresh coriander leaves
2. 1/2 cup mint leaves
3. 1–3 green chilies
4. 1/2 inch piece of ginger (optional)
5. 1 teaspoon roasted cumin powder
6. 1 to 1.5 teaspoons black salt (kala namak)
7. 1/2 to 3/4 teaspoon regular salt
8. 1–2 tablespoons tamarind pulp or 2–3 tablespoons lemon juice
9. 3.5 to 4 cups chilled water
10. 1–2 teaspoons jaggery or sugar (optional)

How to Prepare Crispy Puris:
If you have purchased golgappa puris from the market, preheat your oven to 110–120°C to make them crispy. Arrange the puris in a single layer on a tray and heat them for 4–7 minutes. Ensure they do not turn brown. Afterward, let them cool completely on the tray and store them in an airtight container.

If you are making the puris at home, knead a firm dough using semolina (sooji), a little all-purpose flour (maida), salt, and water. Cover and let it rest for 20–30 minutes. Next, roll out the dough into thin, uniform-sized discs (puris) and fry them in hot oil. For the puris to puff up properly, the dough must be firm, and the oil must be heated to the correct temperature.

How to prepare the tangy potato-chickpea (aloo-chana) stuffing:
First, boil the potatoes, let them cool, and peel them. Lightly mash the potatoes and mix in the boiled chickpeas. Add roasted cumin powder, salt, red chili powder, chaat masala, and fresh coriander leaves to the mixture, and combine well.

Ensure the stuffing is not too moist; it should have a consistency that allows it to be easily scooped up with a spoon. Refrigerate the prepared stuffing for at least 30 minutes—this will make it easier to fill into the golgappas.

How to prepare the spicy coriander-mint water:
In a blender, combine coriander leaves, mint leaves, green chilies, ginger, roasted cumin, black salt, regular salt, and either tamarind pulp or lemon juice. Add about 2 cups of cold water and blend until smooth.

Strain the mixture through a fine-mesh sieve into a jug. Add more cold water until you have a total of 3.5 to 4 cups. Taste the water and adjust the salt, tanginess, or spice level as needed. If it tastes too sour, you can add a little sugar or jaggery.
Chill the water in the refrigerator for at least 2 hours. If you prefer a milder flavor, start with just one green chili; you can gradually increase the number of chilies if you want it spicier.

Tips for serving golgappas:
To keep the golgappas crispy, prepare them just before serving. Make a small hole in each puri using your thumb, fill it with 1–2 spoonfuls of the potato-chickpea mixture, and pour in the chilled, spicy water.
If desired, you can garnish with some boondi, sev, or finely chopped onions. However, add these ingredients only at the time of serving. If the stuffed *puris* are left to sit for too long, they may become soft. Therefore, for the best taste, consume the *golgappas* as soon as they are prepared.
