Yes, this snack is incredibly crispy on the outside while remaining soft and delicious on the inside. The best part is that you don't need to buy anything special from the market; all the ingredients are easily available in your kitchen.

**Ingredients for Sooji Rings**
Semolina (Sooji): 1 cup
Water: 1.5 cups
Boiled potatoes: 2 (well-mashed)
Cumin seeds: 1 teaspoon
Chili flakes: 1 teaspoon
Green chilies: 1-2 (finely chopped)
Salt: To taste
Fresh coriander leaves: 2 tablespoons (finely chopped)
Oil: For frying and a little to mix into the dough

**Easy Method to Make Sooji Rings**
First, heat water in a kadhai (wok) or pan. Add a little oil, salt, cumin seeds, and chili flakes to it. Once the water starts boiling, lower the heat and gradually add the semolina while stirring continuously to prevent lumps from forming.

When the semolina absorbs all the water and thickens to a consistency similar to *halwa*, turn off the heat. Transfer the mixture to a bowl and let it cool slightly.
Now, add the mashed boiled potatoes, finely chopped green chilies, and fresh coriander to the warm semolina mixture and mix well. Knead the mixture with your hands to form a smooth dough. If it sticks to your hands, apply a little oil.

Take a large ball of the dough and roll it out to a slightly thick sheet using a rolling pin. Then, use a bowl or a large lid to cut out round shapes. Next, use a small lid to cut a smaller circle out of the center of the shaped dough, giving it the appearance of a ring or a doughnut. Prepare rings from the remaining dough in the same way.

Now, heat oil in a pan. Once the oil is hot, reduce the heat to medium and carefully add the semolina rings one by one. Fry them until they turn golden brown and crispy on both sides.

Your hot and crispy semolina rings are now ready. Transfer them to a plate and serve with your favorite tomato ketchup or green chutney.
