If you enjoy parathas and want to try something new, the Bikaneri Bhujia Paratha is an excellent choice. Using the famous spicy Bhujia from Bikaner, Rajasthan, as a filling elevates the flavor of the paratha significantly. This recipe is quick to prepare and makes for a great breakfast, a lunchbox item for kids, or a snack to accompany evening tea.

**Ingredients Required**
Wheat flour – 2 cups
Bikaneri Bhujia – 1 cup
Boiled potatoes – 2 medium-sized
Finely chopped onion – 1
Green chilies – 2 (finely chopped)
Fresh coriander leaves – 2 tablespoons
Red chili powder – 1/2 teaspoon
Roasted cumin powder – 1/2 teaspoon
Dry mango powder (Amchur) – 1/2 teaspoon
Salt – to taste
Oil or ghee – for cooking the paratha
**Preparing the Dough**
First, take the wheat flour in a large mixing bowl. Add a little salt and gradually pour in water to knead a soft dough. Apply a little oil over the dough and let it rest, covered, for 15 minutes; this ensures the parathas turn out soft.
**Preparing the Stuffing**
Mash the boiled potatoes thoroughly in a bowl. Add the Bikaneri Bhujia to the mashed potatoes. Also, mix in the chopped onion, green chilies, fresh coriander, red chili powder, cumin powder, dry mango powder, and salt as needed. Keep in mind that Bhujia already contains salt, so add extra salt sparingly. Mix all the ingredients well to prepare the stuffing.
**Making the Paratha**
Take a medium-sized ball of the prepared dough. Roll it out slightly and place 2 to 3 spoonfuls of the stuffing in the center. Seal the edges together and roll it out again gently. Heat a tawa (griddle) and cook the paratha on both sides until golden brown. Once light golden spots begin to appear, apply some ghee or oil and cook until crispy.
Prepare all the parathas in the same way. The Bikaneri Bhujia gives the parathas a unique crunch and a spicy flavor.
Serving Suggestion
Serve the piping hot Bikaneri Bhujia parathas with curd, green chutney, garlic chutney, or pickle. You can also add a dollop of butter on top; this combination further enhances the flavor.
