Whisked yogurt (curd) – 1/2 cup
Turmeric powder – 2 teaspoons
Coriander powder – 1 teaspoon
Garam masala powder – 1/2 teaspoon
Green cardamom – 2
Cinnamon – 1-inch piece
Cloves – 2
Bay leaf – 1
Sugar – 1 teaspoon (to balance the flavor)
Salt – to taste
Oil – as required for cooking
Fresh coriander leaves – finely chopped (for garnishing)

Step-by-step method to make Bengali-style Dry Aloo Dum
Step 1: Prepare the paste
First, take a blender or mixer jar. Add the chopped onion, ginger, garlic, and green chilies to it and blend into a smooth paste. Transfer this paste to a bowl and set it aside.

Step 2: Sauté the potatoes until golden
Heat some oil in a pan. Add the small boiled potatoes, a little turmeric powder, and a pinch of salt. Sauté the potatoes until they develop a beautiful golden-brown color. Once sautéed, remove them from the pan and set aside.
