As the summer season arrives, the scorching sun and profuse sweating can leave us feeling miserable. In such times, we often seek relief by consuming ice-cold water from the refrigerator or chilled soft drinks; however, these items actually cause internal harm to the body. So, what is the authentic and traditional way to beat the intense summer heat? The answer is—Gulkand.

Yes, Gulkand—made from fresh rose petals—is not only sweet and delightful to the palate, but it also works nothing short of magic for our health. In Ayurveda, it is revered as an excellent "cooling tonic."
A Home Remedy to Keep the Stomach Cool in Summer
The greatest benefit of Gulkand during the summer months is its ability to make various gastric ailments—such as gas, acidity, heartburn, and indigestion—vanish into thin air. Furthermore, if you frequently suffer from mouth ulcers caused by the heat, nosebleeds, or excessive fatigue, Gulkand can prove to be an infallible remedy for you.
You may have consumed plenty of store-bought Gulkand, but the unique blend of flavor and health benefits found in pure, homemade Gulkand is simply unmatched. So, without further ado, let us discover the easiest method to prepare it right at home.
Ingredients for Making Gulkand
Fresh petals of *Desi* (Indian) roses: 250 grams
Threaded Rock Sugar (*Mishri*): 250 grams (powdered)
Fennel Seed Powder (*Saunf*): 1 teaspoon
Green Cardamom Powder (*Choti Elaichi*): ½ teaspoon
One clean glass jar
Method for Preparing Gulkand
First, thoroughly wash the fresh rose petals with water. Next, spread them out on a clean cotton cloth and let them dry under a fan to ensure all the moisture evaporates completely.
Now, place these dried petals into a large mixing bowl. Add the powdered rock sugar, fennel powder, and cardamom powder over the petals, and mix everything thoroughly using your hands. If you wish, you may also gently crush the petals with your palms.
Transfer this prepared mixture into a glass jar. Ensure that the jar is completely dry and clean on the inside; otherwise, the Gulkand may spoil.
Now, tightly seal the lid of the glass jar and place it in direct, strong sunlight—on your rooftop or balcony—for 10 to 15 days.

Every one or two days, open the jar and stir the Gulkand—turning it over from top to bottom—using a clean, dry spoon.
In approximately two weeks, the rock sugar will have completely melted, and the rose petals will have softened and thoroughly blended into the sweet syrup. And just like that, your delicious and 100% pure Gulkand is ready!
You can consume one spoonful of Gulkand daily—either in the morning on an empty stomach or at night before going to bed—along with a glass of cold milk or plain water. Whether for children or adults, it is immensely beneficial for everyone.
