**Ingredients for Singhare ke Aate ki Barfi:**

Water chestnut flour (*Singhara atta*): 1 cup
Sugar: 3/4 cup
Desi Ghee (clarified butter): 3 to 4 tablespoons
Water: 2.5 cups
Cardamom powder: 1/2 teaspoon
Dry fruits (chopped): 2 tablespoons

**Method for making Singhare ke Aate ki Barfi:**

First, grease a plate or tray with a little ghee so that the *barfi* can be easily removed after setting.

Next, combine the water chestnut flour, sugar, and 2.5 cups of water in a bowl. Mix well using a whisk or spoon until a smooth batter is formed.

Heat 2 tablespoons of ghee in a *kadai* (wok) and pour in the prepared flour and water mixture. Keep the heat at medium and stir continuously to prevent the mixture from sticking to the bottom.

Keep stirring constantly without stopping, as the mixture will begin to thicken rapidly as it heats up.

In about 5 to 7 minutes, it will become thick and glossy—resembling *halwa*—and start pulling away from the sides of the *kadai*.

Once the mixture has thickened, add the cardamom powder and the remaining tablespoon of ghee, then mix well. Now, turn off the heat and immediately transfer the prepared mixture onto a greased plate. Spread it evenly using the back of a spoon or a small bowl.

Sprinkle finely chopped cashews, almonds, and pistachios over the top and press down gently so that the nuts set into the *barfi*.

Allow the mixture to cool for 15–20 minutes. Once it has set completely, use a knife to cut it into your desired shapes. The water chestnut flour *barfi* is ready.
