Easy Method for Making Oil-Free Chilli Pickle
Step 1:
First, take 250 grams of medium-sized, thick green chillies. Wash them thoroughly with clean water and then dry them thoroughly with a cloth to remove any moisture. Then, cut off the stems and remove them. Now make a small incision lengthwise in each chili, making sure it remains connected from front to back so that the spices can be filled inside.
Step Two:
Now prepare the pickle masala. For this, add 1 teaspoon fennel seeds, 1 teaspoon cumin seeds, 1 teaspoon fenugreek seeds, and 2 teaspoons yellow mustard seeds to a pan. Lightly roast all the spices over low heat to release their aroma. After roasting, let them cool and then grind them coarsely in a mixer. Be careful not to grind the spices too finely; a slightly coarser mixture will enhance the flavor.
Step Three:
Now, take 8-10 lemons and extract their fresh juice. To this, add 1 teaspoon turmeric powder, 1 teaspoon Kashmiri red chili powder, the prepared pickle masala, a little nigella seeds, and salt to taste. Also, mix asafoetida and black salt in a plate and apply a little bit of it to the chilies, so that each chili is infused with the spices.

Step Four:
Now thoroughly mix all the chopped chilies with the lemon and spice mixture. Then, place the chilies in a clean, dry glass jar. Cover the jar and let it sit for 24 hours. After a day, your oil-free chili pickle will be ready to eat. You can easily store this pickle outside.
