Recipe: Stop throwing away ridge gourd peels; cook up a tangy dish by adding potatoes..

Ridge Gourd (Torai) Peel Vegetable Recipe: Often, when preparing vegetables, we peel them and throw the skins away. However, delicious dishes can be prepared from the peels of certain vegetables, and ridge gourd (torai) peels are among them. Instead of discarding them, you can easily turn them into a tasty vegetable dish. It is not difficult to make and requires only the spices commonly found in your kitchen.

Culinary expert Savita Srivastava notes that while most people discard ridge gourd peels, a delicious dish can actually be made from them. Let’s look at an easy way to prepare this dish.

**First, Prepare the Ridge Gourd Peels**

Start by washing the ridge gourd peels thoroughly. Then, use a knife to chop them finely. Ensure there are no thick, fibrous parts in the peels; if the peels seem a bit tough, chop them even more finely. You can also add potatoes if you wish, as this enhances the flavor of the dish.

**Spices Required**

To make this dish, you will need mustard oil, cumin seeds, asafoetida (hing), green chilies, onion, salt, turmeric powder, coriander powder, red chili powder, and *sabzi masala* (vegetable masala).

Place a pan on the stove and add about two tablespoons of mustard oil. Once the oil is hot, add half a teaspoon of cumin seeds. Next, add a pinch of asafoetida, the finely chopped green chilies, and the onion, and sauté them. When the onion begins to turn light golden, add the turmeric powder, coriander powder, and red chili powder. Do not roast the spices for too long, or they might burn.

**Now Add the Chopped Peels**

Once the spice mixture is ready, add the chopped ridge gourd peels. Mix everything well so that the spices coat the peels thoroughly. Then, add salt to taste, cover the pan, and cook on a low flame. Stir the vegetable occasionally. The peels will gradually soften. If necessary, you can add a tablespoon or two of water. Adding too much water can alter the taste and texture of the dish.

Here is how to make the dish even more delicious:
Once the peels are thoroughly cooked and the moisture has evaporated, increase the heat slightly and sauté the vegetable for a few minutes; this enhances the flavor. Finally, you can add a little dry mango powder (*amchur*) or lemon juice. Garnish with fresh coriander leaves before serving. This ridge gourd peel dish pairs well with roti, paratha, or dal-rice. The next time you cook ridge gourd, try making this simple dish with the peels instead of throwing them away.
