Ingredients
Rice - 2 cups
Paneer - 200 grams (cut into small cubes)
Vegetables - 1/2 cup finely chopped carrots, 1/2 cup bell peppers, and a little cabbage
Ginger and garlic - 1 tablespoon each, finely chopped
Green chilies - 2-3
Sauce - 1 tablespoon soy sauce, 1 tablespoon red chili sauce, 1 teaspoon vinegar
Spices - 1/2 teaspoon black pepper powder, salt to taste
Oil - 2-3 tablespoons
For garnish - finely chopped green onions

Method
First, heat a little oil in a pan and fry the paneer cubes until lightly golden. Remove the fried paneer to a plate and set aside. Frying helps the paneer retain its texture in the fried rice and prevents it from breaking.

Heat oil in a large pan over high heat. Add the finely chopped garlic, ginger, and green chilies. Fry them for a few seconds to remove their raw smell, but be careful not to burn them.

Now add the chopped carrots, bell peppers, and cabbage. In Chinese cooking, the heat is always kept high so that the vegetables are cooked but maintain their crispness. Toss the vegetables for 2-3 minutes.
