**Recipe for Potato Jalebi**
**Ingredients**
2 medium-sized boiled potatoes
½ cup refined flour (*maida*)
2 tablespoons cornflour or rice flour
2 tablespoons curd (yogurt)
1 pinch baking soda
Water as required
1 cup sugar
1 cup water (for the syrup)
A little saffron or food coloring (optional)
Ghee or oil for frying
**Method**
First, prepare the sugar syrup. To do this, combine sugar and water in a pan and bring to a boil. Once the sugar has completely dissolved and the syrup feels slightly sticky, turn off the heat. You can also add saffron or cardamom powder to the syrup if desired.
Next, mash the boiled potatoes thoroughly, ensuring there are no lumps. Then, add the refined flour, cornflour, and curd, and mix well. Gradually add water to prepare a thick, smooth batter.
Add the baking soda to the batter just before frying the *jalebis*. Now, transfer the mixture into a sauce bottle or a piping bag. Heat oil or ghee in a pan, pipe the batter into a spiral shape, and fry over medium heat until golden brown.
