Imagine, in just a few minutes, you can make rice that tastes amazing, looks colorful, and is so easy that anyone can make it. Its sweet and sour taste and the freshness of lemon will make your lunch memorable, and believe me, not even a grain will be left on the plate.

Ingredients to make Lemon Rice
Cooked rice: 1 cup (can use leftover rice)
Lemon juice: 2-3 tbsp (can add more or less as per taste)
Peanuts: 2 tbsp
Chana dal: 1 tsp
Urad dal: 1 tsp
Mustard seeds: 1/2 tsp
Asafoetida: a pinch
Turmeric powder: 1/4 tsp
Green chillies: 1-2 (finely chopped)
Ginger: 1/2 inch (grated or finely chopped)
Curry leaves: 8-10
Oil: 2 tbsp
Salt: to taste
Sugar: 1 tsp (or as per taste, to balance the sourness)
Coriander leaves: finely chopped (for garnish)

Method to make Lemon Rice
Firstly, if you are making fresh rice, cook it and let it cool down a bit. If you are using leftover rice, it will be better if it is cold.

Heat oil in a pan or wok. When the oil is hot, add mustard seeds. When the mustard seeds crackle, add chana dal and urad dal and fry till golden brown.

Now add peanuts and fry till they become crispy. After this, add asafoetida, green chillies, ginger, and curry leaves. Fry for a few seconds till a nice aroma starts coming.

Now add turmeric powder and immediately add cooked rice.

Mix the rice well with the tempering so that the color of turmeric and the taste of the spices get infused in the rice. Now add salt and sugar to it.

Finally, before turning off the gas, add lemon juice and mix well. Remember, do not cook the rice for too long after adding lemon juice; otherwise, the taste may become bitter.

Garnish with finely chopped coriander leaves and serve hot, sweet and sour lemon rice.
