Ragi flour: 1 cup
Wheat flour or oat flour: 1/2 cup
Cocoa powder: 2 to 3 tablespoons
Powdered sugar or jaggery powder: 1/2 cup
Baking powder: 1 teaspoon
Baking soda: 1/4 teaspoon
Milk: 1 to 1.25 cups
Melted butter or oil: 2 tablespoons
Vanilla essence: 1 teaspoon
Honey or maple syrup: For serving
Chocolate chips: To taste
Method for making Ragi Chocolate Pancakes:
First, sift the Ragi flour, wheat flour, cocoa powder, powdered sugar, baking powder, and baking soda together into a large mixing bowl.
Now, add the melted butter and vanilla essence to this dry mixture. Next, gradually add the milk while whisking continuously. Ensure that no lumps form in the batter. The batter should be neither too thick nor too thin. If your children love chocolate, add a few chocolate chips to the batter. This provides a delightful chocolate crunch as you eat the pancakes.
Now, heat a non-stick pan or griddle over medium heat. Lightly grease the pan with butter or ghee. Pour a ladleful of batter into the center of the pan. Let it spread naturally; do not spread it out thinly like a dosa.
