While typically made with black carrots and mustard, you can easily prepare it at home using rice and yogurt.

**Method for Making Kanji with Rice and Yogurt**
This natural probiotic drink strengthens the digestive system by boosting beneficial gut bacteria and maintains internal bodily balance.
**Ingredients**
1 cup plain boiled rice
2 cups slightly sour yogurt
4–5 cups lukewarm boiled water
1 teaspoon rock salt (*sendha namak*) or black salt (*kala namak*)
1 teaspoon roasted cumin powder
A pinch of black pepper powder
**Preparation Method**
First, lightly mash the boiled rice so it blends well with the water.
Now, add the yogurt and whisk thoroughly. Then, pour in the lukewarm water to create a thin mixture.
Add the salt, roasted cumin, and black pepper to the mixture.
Pour the mixture into a glass or clay vessel and cover it.
Place it in mild sunlight or a warm spot for 24–36 hours to allow for natural fermentation.
Once you notice a slight tanginess, a pleasant aroma, and small bubbles forming, your *Kanji* is ready.
Strain the drink, store it in the refrigerator, and consume it within 2–3 days.
