It is so delicious that it can even make non-vegetarian dishes seem bland by comparison. Gudiya Kumari noted that while jackfruit can be consumed in both raw and ripe forms, the raw variety is considered best for making this curry.
Preparing this jackfruit curry is quite simple. First, peel the jackfruit and cut it into small pieces. Boil the pieces in salted water and then lightly fry them to eliminate any raw smell. Next, heat oil in a pan and sauté cumin seeds, asafoetida (*hing*), onions, tomatoes, and ginger-garlic paste.
Then, add turmeric, red chili powder, coriander powder, yogurt, and *garam masala* to create a thick spice base. Finally, add the jackfruit pieces and cook thoroughly over a low flame. Finally, it is garnished with fresh coriander and served piping hot with roti, paratha, or rice.
