Often, in an effort to save time, people slice a batch of fruit all at once and consume it throughout the day. According to health experts, this seemingly minor habit can have serious repercussions for one's health. The high temperatures and humidity characteristic of summer are the greatest enemies of cut fruits. The moment a fruit is peeled, it comes into contact with the external environment; this not only leads to a depletion of its nutrients but can also turn it into a breeding ground for pathogens. During the summer, keeping cut fruits exposed for extended periods is not without its risks.

Kamini Sinha, a dietician and founder of the 'Diet Mantra' clinic in Noida, explains that the moment we slice a fruit, the enzymes contained within it begin to react with the oxygen present in the air—a process known as oxidation. You may have observed that an apple or a banana begins to turn brown shortly after being cut; this is a direct result of this very process. During this time, the Vitamin C and other vital antioxidants present in the fruit begin to degrade rapidly. The longer the fruit remains sliced, the more its quality and nutritional value diminish. Consequently, consuming such fruit yields little to no health benefit.

The expert further noted that the summer season provides the most favorable conditions for the proliferation of bacteria and fungi. Cut fruits contain high levels of water and natural sugars, which serve as a food source for microorganisms. If sliced ​​fruits are left at room temperature for more than an hour, they can become susceptible to contamination by harmful bacteria—such as Salmonella and E. coli—which are known to cause food poisoning. Furthermore, leaving cut fruits exposed poses the risk of dust, dirt, and flies settling on them. Flies travel from unsanitary environments and deposit microscopic pathogens onto the fruit, thereby creating a health hazard.

Dietitians warn that consuming cut fruits sold at street stalls—or those that have been left sitting at home for an extended period—can lead to health issues such as typhoid, cholera, and severe abdominal cramps. To derive the maximum nutritional benefit from fruits, one should always adhere to the "cut and eat immediately" principle. If you must store fruits, keep them whole in the refrigerator and cut them just before consumption. In situations where you are compelled to cut fruits in advance, place them immediately in the refrigerator within an airtight container; however, ensure that you do not consume cut fruits that are more than 2–3 hours old. Finally, do not forget to thoroughly wash both the fruits and your hands before cutting them.
