Raita is an integral part of Indian cuisine; it not only enhances the flavor of a meal but also balances it. While people commonly make raita using boondi, cucumber, or onion, a sweet potato and spinach raita is an excellent choice if you are looking for something new and nutritious. Sweet potatoes are rich in fiber, Vitamin A, and complex carbohydrates, whereas spinach is a great source of iron, folate, and various essential vitamins. Combining these two with yogurt creates a raita that is not only delicious but also light on the stomach.

**Ingredients for Sweet Potato and Spinach Raita**
1 medium-sized sweet potato
1 cup fresh spinach (finely chopped)
2 cups fresh yogurt
1 teaspoon roasted cumin powder
½ teaspoon black salt
Regular salt to taste
¼ teaspoon black pepper powder
1 green chili (finely chopped, optional)
A little finely chopped fresh coriander
For tempering: 1 teaspoon ghee, a pinch of cumin seeds, and a few curry leaves (optional)

**Method**
First, wash the sweet potato thoroughly and boil or steam it. Once tender, let it cool, peel it, and cut it into small pieces. Meanwhile, wash the spinach thoroughly and lightly boil or steam it for a minute or two. Immediately transfer it to cold water to retain its green color. Then, drain the excess water from the spinach and chop it finely.

In a large bowl, whisk the yogurt thoroughly until smooth and lump-free. Add the roasted cumin powder, black salt, regular salt, and black pepper. Now, add the boiled sweet potato, chopped spinach, and green chili, and mix gently. If you enjoy the flavor of tempering, heat a little ghee in a small pan, add cumin seeds and curry leaves, and pour this prepared tempering over the raita. Finally, garnish with fresh coriander and refrigerate for a while to let it chill.
