Ingredients for Crispy Chilli Potato

For frying the potatoes

4 large potatoes

3 tablespoons cornflour

2 tablespoons all-purpose flour (maida)

Salt to taste

Oil for frying

For preparing the chilli sauce

1 tablespoon finely chopped garlic

1 capsicum (thinly sliced)

2 tablespoons tomato sauce

1 tablespoon red chilli sauce

1 teaspoon soy sauce

1 teaspoon vinegar

1 teaspoon honey or sugar

Sesame seeds for garnish

Spring onions for garnish

Step 1 - Prepare the potatoes

First, peel the potatoes and cut them into long, thin strips.

Soak them in cold water for 10 minutes to remove the excess starch.

Afterward, drain the water and dry the potatoes thoroughly.

Step 2 - Coat the potatoes

Mix cornflour, all-purpose flour (maida), and salt in a bowl.

Thoroughly coat the potato strips in this mixture.

This ensures the potatoes become extra crispy after frying.

Step 3 - Fry the potatoes

Heat oil in a pan (or wok) and fry the potatoes over medium heat until golden brown.

For an extra crispy texture, you can double-fry the potatoes.

Fry them lightly the first time, and then fry them again over high heat the second time.

Step 4 - Prepare the chili sauce

Heat one tablespoon of oil in a pan.

Add garlic and sauté lightly.

Add the capsicum (bell pepper) and cook for 1-2 minutes.

Next, add tomato sauce, red chili sauce, soy sauce, vinegar, and honey; mix well.

You can add 1-2 tablespoons of water if needed.

Step 5 - Toss the potatoes in the sauce

Add the fried potatoes to the sauce and toss over high heat for 1 minute so the sauce coats the potatoes thoroughly.
Garnish with sesame seeds and spring onions, then serve hot.
