The best part is that these homemade cookies are free of additives, and their fresh, homemade taste is simply unmatched. Let's make these delicious, melt-in-your-mouth coconut cookies without any hassle.

Ingredients for Coconut Cookies
Maida or wheat flour: 1 cup (you can also use wheat flour for a healthier option)
Coconut shavings: 3/4 cup (keep a little aside to coat the cookies)
Powdered sugar: 1/2 cup
Ghee or butter: 1/2 cup (should be at room temperature, neither too hard nor melted)
Baking powder: 1/2 teaspoon
Cardamom powder: 1/4 teaspoon (for a nice aroma)
Milk: 1 to 2 tablespoons (if needed for making the dough)

How to Make Coconut Cookies
First, combine ghee or butter and powdered sugar in a large bowl. Whisk with a spoon or whisk until light, fluffy, and creamy. This will take about 4-5 minutes.

Next, sift the flour or wheat flour, baking powder, and cardamom powder into this creamy paste.

Add coconut powder to the same bowl and mix gently with your hands to form a soft dough. Remember, don't knead it too much like roti dough; just bring everything together. If the mixture seems too dry, add just 1 or 2 tablespoons of milk.

Now, break off small lemon-sized balls from this dough and flatten them slightly between your palms.

Lightly coat these cookies in the dry coconut powder we kept aside. This will give them a bakery-like appearance and a crispy finish.

Preheat your air fryer to 160°C for 5 minutes. Line the air fryer basket with butter paper and place the cookies at a distance (as they expand slightly during cooking). Bake them at 160°C for 10 to 12 minutes.

 

When you remove the cookies from the air fryer, they may feel a little soft to the touch. Don't worry, this is completely normal. Leave them to cool on a wire rack for 10-15 minutes. Once cooled, they will become crispy and crispy.
