In the morning rush, everyone wants a breakfast that tastes amazing, is easy to prepare, and looks mouth-watering. If you have leftover idlis from the night before or are simply bored of eating plain idlis, then Fried Idli is the perfect dish for you. Let’s learn the easy recipe for it.

Ingredients for Fried Idli:
Leftover idlis – 6 to 8
Oil or ghee – 2 tablespoons
Mustard seeds – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Curry leaves – 8 to 10
Green chilies – 2
Onion – 1 (finely chopped)
Capsicum – 1/2
Turmeric powder – 1/4 teaspoon
Red chili powder – 1/2 teaspoon
Sambar masala or Pav Bhaji masala – 1 teaspoon
Salt – to taste
Fresh coriander – finely chopped
Lemon juice – 1 teaspoon
Method for making Fried Idli:
First, cut the idlis into uniform small pieces; ensure the idlis are completely cold before cutting, as warm idlis might break.
Next, heat two tablespoons of oil or ghee in a kadhai (wok) or pan. Once hot, add the mustard seeds, cumin seeds, chopped green chilies, and curry leaves. Let the mustard seeds splutter well.
Now, add the chopped onion and capsicum to the pan. Sauté them over high heat for 2 to 3 minutes.
Do not cook the vegetables completely; they should retain their crunch.
Now, lower the heat and add the turmeric powder, red chili powder, Sambar masala (or Pav Bhaji masala), and salt. Stir the spices on low heat for 30 seconds to ensure they do not burn. Now, add the cut idli pieces to the pan and gently toss them with the spices and vegetables so that each piece is well-coated with the spices.
Sauté the idli over medium heat for 3 to 4 minutes, then turn off the heat.
Squeeze lemon juice over the top, garnish with fresh coriander leaves, and serve.
