Ingredients for Chilli Cheese Garlic Paratha:
Wheat flour – 2 cups
Mozzarella or processed cheese – 1 cup
Garlic – 2 tablespoons
Green chillies – 2-3
Chilli flakes – 1 teaspoon
Fresh coriander leaves – 3 tablespoons
Butter or ghee – 3-4 tablespoons
Salt – to taste
Water – for kneading the dough
Method for making Chilli Cheese Garlic Paratha:
First, take the wheat flour in a large mixing bowl. Add half a teaspoon of salt and a spoonful of ghee or oil to it. Now, gradually add water and knead it into a soft dough. Cover the dough and let it rest for 10 to 15 minutes so it sets properly.
Next, prepare a mixture in a small bowl by combining melted butter, finely chopped garlic, and a little fresh coriander. Meanwhile, prepare the stuffing in a separate bowl by mixing the grated cheese, finely chopped green chilies, chili flakes, and the remaining fresh coriander.
Next, pinch off a medium-sized ball of dough and roll it out into a circle using some dry flour for dusting. Spread the prepared garlic-butter evenly over the surface of the rolled-out dough using a spoon. Then, place 2–3 spoonfuls of the cheese and chili mixture in the center.
Gather the edges of the dough towards the center and seal it to form a bundle (potli). Remove any excess dough and gently press the bundle flat with your hands. Now, using dry flour, roll it out gently, taking care not to let the cheese spill out.
Heat a tawa (griddle) over medium heat and place the rolled paratha on it. Flip it over once one side is lightly cooked. Apply butter or ghee to both sides and cook the paratha, flipping it occasionally, until it turns golden brown and crispy on both sides. Keep the heat at medium so the cheese inside melts thoroughly.
Your piping hot, crispy, and cheesy Chili-Cheese Garlic Paratha is ready. Serve it with tomato ketchup, spicy green chutney, or boondi raita.
