Ingredients for Green Moong Cutlets:
Green moong (soaked overnight) – 1.5 cups
Boiled potatoes – 3
Finely chopped onion – 2
Green chilies – 3-4
Ginger – 1 small piece
Fresh coriander leaves – 2 tbsp
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
Chaat masala – 1/2 tsp
Salt – to taste
Cornflour or breadcrumbs – 2 tbsp
Oil – for frying

Method for Making Green Moong Cutlets:

First, coarsely grind the soaked green moong in a mixer.

Ensure you do not turn it into a smooth paste; keeping it slightly coarse makes the cutlets crispier.

Now, transfer the ground moong to a bowl and add the mashed boiled potatoes to it. Next, add finely chopped onion, green chilies, ginger, fresh coriander, red chili powder, garam masala, chaat masala, and salt to the mixture, and mix everything well.

Now, add cornflour or breadcrumbs to the mixture to help the cutlets bind properly.

Shape the mixture into small patties or cutlets.

Then, heat a little oil in a non-stick pan and shallow-fry the cutlets over medium heat.

Cook them until they are golden brown and crispy on both sides. Once the cutlets are nice and crispy, remove them from the pan and place them on a plate.

Serve the crispy green moong cutlets piping hot with green chutney, sweet tamarind chutney, or tomato sauce.
