Sweet Corner: Don't worry if your milk curdles! Easily prepare Kalakand Barfi..

Often, when milk curdles at home, our first reaction is that it has gone to waste. Indeed, most people either discard the curdled milk or, perhaps reluctantly, turn it into plain *paneer* (cottage cheese).

However, did you know that you can easily use this same curdled milk to make 'Kalakand Barfi'—a delicious, grainy, and juicy sweet that is quite expensive when bought from a shop? Believe it or not, it turns out so tasty that even your guests won't believe it was made at home! Let’s learn the easiest way to make perfect, professional-quality *Kalakand*.

**Ingredients Needed**
Curdled milk (the *chhena*—solid curd—obtained from approximately 1 to 1.5 liters of milk)
Half a cup of fresh milk or milk powder
4–5 tablespoons of sugar (adjust to taste)
Half a teaspoon of cardamom powder
Finely chopped pistachios and almonds (for garnishing)
A little *ghee* (to grease the plate)

**Preparation Method**
First, strain the curdled milk through a clean muslin cloth. Pour some cold water over it to remove any sourness. Gently squeeze the cloth; be careful not to over-squeeze—the *chhena* should retain some moisture.
Transfer the prepared *chhena* onto a large plate and gently crumble it with your hands to achieve a grainy texture. Do not knead it into a smooth, dough-like consistency.

Place a heavy-bottomed pan or *kadhai* on the stove. Add the crumbled *chhena* and half a cup of milk. Cook over medium heat, stirring continuously.
Once the milk begins to dry up and the mixture starts to thicken, add the sugar. The mixture will thin out slightly upon adding the sugar. Continue to stir constantly until the mixture begins to pull away from the sides of the pan and gathers together into a single mass. Now, turn off the gas, add the cardamom powder, and mix well. This will give the barfi an aroma just like the ones sold in shops.
Take a plate or tray and grease it lightly with some ghee. Pour the hot mixture onto the plate and spread it out evenly into a square shape. Sprinkle finely chopped pistachios and almonds over the top and press them down gently with a spoon so that the nuts adhere well.

Leave it to set at room temperature for 2 to 3 hours. If you prefer, you can also place it in the refrigerator for an hour to help it set faster. Once it has set firmly, use a knife to cut it into square pieces.
And there you have it—your delicious, grainy, melt-in-the-mouth Kalakand barfi is ready! Next time your milk curdles, instead of feeling disappointed, you’ll be happy—because now you know the secret to making a fantastic dessert right at home.
