Besides sesame ladoos, Revdi is another popular winter special sweet that keeps the body warm. Sesame Revdi is rich in calcium, iron, and healthy fats. This sweet is known not only for its taste but also for its energy-giving and warming properties. The combination of jaggery and sesame seeds makes it nutritious, while its crispy texture is loved by people of all ages.

Sesame Revdi holds special importance during Makar Sankranti, Lohri, and other festivals. Making it requires a little patience and the right technique, but when homemade Revdi is ready, its taste is far purer and more delicious than store-bought Revdi. The right syrup consistency and proper folding result in a light color and a glassy texture.

Saroj Devi, a woman from a rural area, explained that making sesame Revdi is easy, but it requires some effort. The ingredients required are 400 grams of jaggery, half a cup of sugar, ¼ cup of water, ¼ teaspoon of lemon juice, half a teaspoon of rose water, three teaspoons of ghee, three pinches of Himalayan pink salt, and three cups of white sesame seeds.

First, in a pan, combine jaggery, sugar, water, lemon juice, rose water, and a pinch of pink salt and mix well. Now, boil it over low heat and cook for 2 to 3 minutes until the jaggery is completely melted. After that, add ghee and cook while stirring continuously until the syrup is formed. To check the syrup consistency, drop a little syrup into cold water; if it hardens and forms a ball, the syrup is ready. It's important to work quickly once the syrup is ready, as it hardens quickly. To avoid burns, wear heat-resistant gloves and keep your hands and tools greased with ghee.

Now pour the mixture onto a greased silicone mat and let it cool for 1 minute. Then, using a greased scraper, fold it continuously for 8 to 10 minutes until the mixture is cool enough to handle. After that, continue stretching and folding it for 4 to 5 minutes until it becomes light in color, glossy, and pliable. Now cut it into small pieces and set them aside. Separately, dry roast the sesame seeds in a pan over low heat for 4 to 5 minutes and then turn off the heat. Now add the chopped jaggery pieces to the sesame seeds and coat them well. Let it cool completely and store it in an airtight container. This sesame candy (rewadi) stays fresh for up to a month.
