If you are bored of eating the same old vegetable dishes at home, *koftas* offer a delicious and easy alternative. The best part is that with slight variations, you can create a completely different flavor profile each time. Whether it is a creamy, mild gravy, a spicy kick, or a rich, royal style, *kofta* recipes can be prepared in numerous ways.

Ingredients like vegetables, *paneer* (cottage cheese), or lentils are typically used to make *koftas*. Serving them with gravy transforms even a simple meal into something special. This dish is also an excellent addition to the lunch or dinner menu when hosting guests.
If you usually end up making *lauki* (bottle gourd) *koftas* whenever the dish is mentioned, try something different this time. You can explore three distinct *kofta* recipes to enjoy a variety of flavors:
**Malai Kofta**
*Malai Kofta* is a great choice for those who prefer a mild, creamy, and rich gravy. Prepare small *koftas* using *paneer* and boiled potatoes, then lightly fry them. For the gravy, cook onions, tomatoes, cashews, and spices together, then blend the mixture into a smooth paste. Stir in some cream or *malai* (milk cream) and add the *koftas*. A sprinkle of *kasuri methi* (dried fenugreek leaves) on top enhances both the flavor and aroma.
**Lauki Kofta (Bottle Gourd Kofta)**
Grate the bottle gourd and squeeze out the excess water; then, mix it with gram flour (*besan*), spices, and green chilies to shape small *koftas*. These can be either deep-fried or air-fried. *Lauki koftas* taste delicious with a spicy tomato-onion gravy and offer a refreshing change from everyday vegetable dishes.
**Paneer Kofta**
*Paneer Kofta* is a richer, party-style option. Mash the *paneer*, mix in some cornflour (or a binding agent as needed), and shape the mixture into round *koftas*. Lightly fry them and add them to a gravy made with tomatoes, onions, ginger-garlic, and spices.

A quick tip to vary the flavor:
You can adjust the quantity of spices and gravy in all three recipes according to your preference. Add the koftas to the gravy just before serving so they do not break apart from soaking for too long. They can be served with naan, roti, paratha, or jeera rice.
