The traditional cuisine of Rajasthan is renowned across the country for its authentic, rustic flavors and unique dishes. As the winter season arrives, households here begin preparing *bajre ki roti* (pearl millet flatbread), garlic chutney, and a variety of piping-hot vegetable dishes. Among these traditional delicacies, *Gwarphali Dhokli* (cluster beans with gram flour dumplings) holds a special place. Popular in both rural and urban households, this dish is elevated by the addition of spices like garlic, asafoetida (*hing*), cumin, and fennel seeds. If you are looking to prepare something new yet traditional this winter, you should definitely try this simple recipe for *Gwarphali Dhokli*.

To prepare *Gwarphali Dhokli* in the authentic Rajasthani style, you will need a few ingredients that are easily available at home:
Cluster beans (*Gwarphali*) – 250 grams
Gram flour (*Besan*) – 1 to 1.5 cups
Buttermilk or yogurt – 1.5 cups (optional)
Oil or *ghee* – 2 to 3 tablespoons
Cumin seeds and mustard seeds – 1 teaspoon each
Asafoetida (*hing*) – ½ teaspoon
Turmeric powder – 1 teaspoon
Red chili powder – 1.5 teaspoons
Coriander powder – 2 teaspoons
Fennel seed powder – 1 teaspoon
Garlic – 7 to 8 cloves
Green chilies – 2 to 3
Carom seeds (*ajwain*), salt, and fresh coriander leaves – to taste.
First, prepare the gram flour dumplings (*dhokli*):
To make *Gwarphali Dhokli*, begin by taking the gram flour in a large mixing bowl. Add some salt, turmeric, red chili powder, carom seeds (or cumin seeds), and a tablespoon of oil, then mix well. Gradually add water and knead it into a firm dough—similar to the consistency of dough used for *puris*. Divide the prepared dough into small portions and roll them into long, finger-shaped dumplings. You can also shape them into small, elongated dumplings (*muthiyas*). Place these *besan* (gram flour) dumplings on a plate and set them aside. Ensure the dough is not too soft; otherwise, the dumplings might break during the cooking process.
Preparing the spiced tempering for the cluster beans (*gwarphali*):
Wash the cluster beans thoroughly and cut them into small pieces. Heat oil or ghee in a pan or pressure cooker. Add cumin seeds, mustard seeds, and a pinch of asafoetida (*hing*) to temper. Next, add crushed garlic and finely chopped green chilies, and sauté for a while. In a small bowl, mix turmeric powder, red chili powder, coriander powder, and fennel seed powder with a little water to form a paste. Add this paste to the pan and sauté the spices well. Once the spices become fragrant, add the chopped cluster beans and stir for about two minutes; this ensures the flavors of the spices are well absorbed by the beans.
Adding the dumplings to the boiling gravy:
Add about two to three glasses of water to the spiced cluster beans and bring it to a boil—ensure there is enough water for the dumplings to cook thoroughly. Once the water begins to boil, gently add the *besan* dumplings, one by one. If you are using a pressure cooker, cook until it whistles two to three times. If cooking in a pan, cover it with a lid and cook over medium heat for about 15 to 20 minutes. Stir occasionally and carefully to prevent the dumplings from sticking to the bottom of the vessel. Once the cluster beans and the *besan* dumplings are tender and the gravy has thickened slightly, your delicious dish is ready.

Serve with Ghee and Fresh Coriander
Once the dish is ready, garnish it with finely chopped fresh coriander. You may also add a little *desi* (clarified) ghee while serving it hot. Rajasthani Gwarphali Dhokli can be enjoyed with *bajra* (pearl millet) roti, wheat roti, or rice. Since *gwarphali* (cluster beans) is rich in fiber and *besan* (gram flour) contains protein, this dish can form part of a balanced meal. However, its nutritional value depends on the specific ingredients used and the quantities in which they are added. Prepared with traditional spices, this dish is perfect for winter and can make a family meal truly special.
