If you are bored of eating the same old lentils and vegetables every day and want to try something new and exciting, we have a special recipe for you today. 'Dahi Baingan' (Yogurt Eggplant) is a fantastic dish that can transform an ordinary meal into a feast.

When tender, fried eggplant slices meet cool, tangy yogurt and are topped with an aromatic garlic *tadka* (tempering), the resulting flavor is so delicious that you’ll be licking your fingers. Let’s learn the easiest way to make it.
**Ingredients Required for Dahi Baingan**
Eggplant: 250g (small or medium-sized, cut into round slices)
Yogurt: 2 cups (fresh and thick, well-whisked)
Turmeric powder: ½ teaspoon
Red chili powder: ½ teaspoon
Roasted cumin powder: 1 teaspoon
Salt: To taste
Oil: For shallow frying the eggplant
Ghee or oil: 2 tablespoons
Mustard seeds: 1 teaspoon
Cumin seeds: ½ teaspoon
Garlic: 7-8 cloves (finely chopped)
Dried red chilies: 2-3 whole
Curry leaves: 8-10 leaves
**Easy Method to Make Dahi Baingan**
First, wash the eggplant thoroughly and cut it into thin, round slices. Sprinkle a little salt, turmeric powder, and red chili powder over the slices and let them sit for 10 minutes; this allows the flavors to penetrate the eggplant.
Next, heat a little oil in a pan or on a griddle. Place the eggplant slices in the pan and cook them until they are golden brown and completely tender on both sides. Once fried, transfer them to a plate and let them cool slightly.
Take the whisked fresh yogurt in a large bowl. Add the roasted cumin powder, a little red chili powder, regular salt, and a pinch of black salt, then mix everything well. If you prefer a hint of sweetness, you can add half a teaspoon of sugar; this will further enhance the flavor.
Now, add the fried and cooled eggplant pieces to the prepared yogurt mixture. Mix very gently so the eggplant pieces do not break and the yogurt coats them thoroughly.

The real flavor lies in this step. Heat 2 teaspoons of ghee or oil in a small pan. Add mustard seeds and cumin seeds. Once they begin to splutter, add finely chopped garlic and dried red chilies. Sauté the garlic until it turns light golden. Turn off the heat and immediately add the curry leaves.
Pour this sizzling, aromatic tempering directly over the bowl of yogurt-eggplant. Your delicious and tangy Dahi Baingan is now ready.
For garnish, you can sprinkle some finely chopped fresh coriander on top. Serve it hot with roti, paratha, or fluffy cumin rice (jeera rice).
